I promised to share with you a chart on how to tell if your eggs are fresh and healthy. After becoming sick (vomiting, stomach pains, malaise, nausea) twice in a few months after buying ORGANIC eggs at my local grocers, I created this sheet and began teaching this technique to my clients and students. In each case the expiration date was at least 7 days in the future yet when eggs were tested they were NOT fresh. It is VERY important you get into the habit of testing each egg BEFORE cracking or hard-boiling. Before writing this blog I tested 12 eggs I just purchased as Organic and two tested older than about three weeks in the same dozen. I use a 4 cup glass measuring cup to test my eggs now, just the right size and circumference, you can use any container but best if its glass, not plastic.
