After working with hundreds of clients with inflammatory disorders specifically fibromyalgia, Scleroderma, arthritis, IBS, Crohn’s, etc., to name a few, I’m amazed they are not better informed as to the health-depleting consequences of eating wheat/gluten products. In one study researchers placed a group of patients diagnosed with rheumatoid arthritis on a gluten-free diet for 14 weeks. At the end of the study period, most participants reported dramatic improvements in their symptoms.
Another study found that up to 66% of celiac disease patients (considered a severe form of gluten-sensitivity) all displayed chronic symptoms of joint inflammation and pain.
Gluten isn’t only in wheat; it’s also in barley and rye. Additionally, it’s in nearly all processed foods (along with other toxic inflammation-causing ingredients). It is often used as a texture enhancer and as a thickening agent because it’s cheap. You’ll also find it in places like:
- Salad dressings
- Deli meats
- Potato chips
- Soy sauce
- The glue on envelopes (usually also contain potato starch)
Known Causes of Gluten-sensitivity
This sensitivity is usually caused by the body not producing the enzyme that breaks down wheat protein. That said, when anything is consumed containing gluten, their body sees it as a foreign substance and the body produces cytokines and other inflammatory agents in its attempt to deal with it.
The following symptoms are the most attributed to those who are gluten-sensitive:
- Brain fog
- Unusual fatigue
- Irritable Bowel Syndrome
- Constipation and/or diarrhea
- Thyroid dysfunction
- Unexplained weight gain & inability to lose it
- Joint pain & soft tissue pain
- Redness and/or swelling of the skin
Note: Only a small percentage of the population has actually been diagnosed with a gluten-related disorder; yet, a very large percentage of the population has symptoms that are commonly caused to a gluten sensitivity…without knowing gluten is the underlying saboteur.
